Super Simple Acorn Squash
Serves 2


As the cooler temperatures start to roll in, so does the bounty of winter squash. Feel free to use whatever squash suits you, we chose acorn as it is what grew in the garden. We're highlighting one of our favorite products, Melt Buttery Spread, in this recipe. Look for it in your local grocery retailers as it is a great alternative to butter.

Ingredients:

1 acorn squash, cut in half lengthwise and seeds removed
2 tsp Melt Buttery Spread (may substitute olive oil)
1 tsp cinnamon
Salt and pepper to taste

Directions:

1. Preheat oven to 350 degrees
2. Mist a cookie sheet with cooking spray. Place squash, cut side down, on top of sheet.
3. Place in the oven and bake for 30 minutes. Remove from oven, flip to face up and season inside of squash with a pinch of salt and pepper.
4. Divide Melt Buttery Spread and place 1 tsp in each squash and spread around. Sprinkle equal parts of cinnamon on top of butter. Place back in the oven for 15 more minutes.
5. Remove from oven and enjoy!
